Stuffed Peppers

Ingredients

  • 4 large bell peppers, tops cut off and seeds removed
  • 1 pound ground beef
  • 1 cup cooked brown rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese, optional (cheddar, Monterey Jack, or a blend)

Directions

  • Preheat your oven to 375°F.
  • Prepare the bell peppers by cutting around the top and stem (like a lid), and removing the seeds and membranes. Lightly spray the pepper halves with oil and place them in a baking dish.
  • In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
  • Add chopped onions and minced garlic to the skillet with the cooked beef. Sauté for 2-3 minutes until the onions are softened.
  • Stir in the diced tomatoes, cumin, chili powder, paprika, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to blend well.
  • Add the cooked rice to the beef mixture, mixing thoroughly.
  • Spoon the filling into each bell pepper half, pressing down gently to pack the filling. Fill each pepper until generously stuffed.
  • Sprinkle shredded cheese (if using) over the stuffed peppers. Cover the baking dish with foil and bake for 25-30 minutes or until the peppers are tender. Enjoy!
